Kala-Lappi uses cutting-edge technology in cold smoking

Kala-Lappi Oy has implemented Wapice IoT-TICKET® application to enable the monitoring of the cold smoking process regardless of time and place. What is achieved is efficiency as well as unique and mouth-watering cold-smoked salmon of uniform quality. Data is collected using WRM247+, an IoT Edge device developed by Wapice.

Established in 2014, Kala-Lappi is a Finnish company that uses cutting-edge technology alongside traditional craft skills. Kala-Lappi products include unique cold-smoked rainbow trout among many other products with new flavours. The company’s activities and products focus on naturalness, authenticity, passion, integrity and independence, not to forget traditions.

The fish preparation processes have been refined for several decades, and already four generations have tested different methods over the years. “When a hobby turned into a business, it was important to do things efficiently without compromising on quality,” says Vesa Lappi, Managing Director of Kala-Lappi.

Cold smoking is a complex art that requires just the right temperature and process to ensure that the fish is well done and of high quality. The process has many stages where timing and temperature are key to a successful outcome. “Before IoT-TICKET® was introduced, we had to be on site to monitor the process on weekdays, evenings and weekends. Now things are much easier and time savings are significant since the process can be monitored from anywhere and at any time,” Mr Lappi continues.

– Kala-Lappi is a fine example of the flexibility of IoT-TICKET®. The same system can be used by large listed companies and smaller companies, and it is not tied to any particular industry. The benefits of digitalisation are readily available without major product development projects. Wapice has always wanted to develop solutions that benefit the customer from day one, with no need to waste time on customised solutions. Deployment is both inexpensive and fast, and customer-specific applications can be built to meet the needs of the particular customer, adds Markus Mäkelä, Business Development Director at Wapice.

The introduction of the system went smoothly and concrete results were obtained very quickly. WRM247+ was installed in the smokery to send process data to the cloud-based IoT-TICKET® application. The application can be used to monitor data and change control parameters in real time.
